Boutique Wines and Slow Food May 31 – 2011
Our 1.5 hectare family boutique winery is passionate about growing and making premium cool climate pinot noir, chardonnay and sparkling wine. The setting and lifestyle of the Adelaide Hills makes this an ideal place to realise this ambition. The hills around Mt Lofty produce premium wines – just within a few kilometres of our estate are Ashton Hills and Morialta Vineyards.
Our estate is 20 mins drive or 16 Km from the Adelaide CBD and 5 Km north of Mt Lofty. At 500 metres above sea level we have a rainfall of 1300mm per annum and cool nights all year, which is excellent for pinot noir and chardonnay. The vineyards are nestled in 3 to 4 hectares of eucalypts.
There are five small parcels of vines, each with its own particular microclimate, orientation and soil type, or ‘terroir’. Handpicked rapes from each block are vinified individually in small open fermenters to produce 500 cases per annum including the sparkling pinot chardonnay.
The high winter rains means that there is no need for irrigation in the Adelaide Hills and this ensures greater concentration in the grapes as well as minimal impact on the water table. Vertical shoot positioning and thinning result in our elegant and concentrated wines with an annual yield of around 1.5 tonnes per acre.
Our organic low intervention/traditional methods result in an austere but elegant pinot with a weight similar to those of northern Burgundy such as in Nuit St George. After fermentation the wine is matured in a mix of new and seasoned Francois Frere French oak. Our pinot noir has a natural spiciness from our terroir with fine tannins, a generous mouthfeel and extended length, with the fruit well-balanced with natural acidity.
The chardonnay is fermented slowly in mix of seasoned and new Treuil French oak barrels until dry. Batonnage is used to assist in a ‘leesy/buttery’ texture and to continue activity to eliminate air affecting in the wine. We use significant malolactic fermentation and are aiming for a round mouthfeel, with a fine, long acid finish and some fine oak complexity.
The chardonnay grapes for our sparkling wine are grown in Ashton by Ric and Ali Zoina and at Norton Summit Vineyards this 70% chardonnay:30% pinot noir blends un-irrigated, unfertilized low yielding well-formed grapes. The wine is produced in a mixture of new and seasoned oak adding complexity. Partial malolactic fermentation has resulted in a very enticing sparkling with some yeasty flavours and fine bead.
Our cellar door consists of a tasting studio and a group tasting masterclass/luncheon/seminar venue adjacent to the winery. These have a view down the valley and overlook the vineyards which are surrounded by mature gum trees, with the occasional koala bear, kangaroo and geese wandering around from time to time. We pride ourselves on serving ‘localvore’ food, much of it sourced exclusively from our valley.
